Rolling Fork Barbados 22 Year - 2020

The Founders of Rolling Fork have been long-time admirers of the fine rums being distilled by the powerhouse Foursquare Distillery of Barbados. Thankfully,, the proprietors of that fine establishment are kind enough to let some casks make their way to independent bottlers. When a few casks of rum distilled in 1998 by Foursquare came available, Rolling Fork jumped at the opportunity to bring some of that well-aged rum stateside. The nose smells like someone baked an apple pie in a wood-fired oven using cedar and seasoned oak. In this long-aged rum,, the classic notes of a Foursquare distilled rum,, including floral and citrus make a brief appearance. However,, as may be expected from a rum aged 22 years,, the barrel influence delivers vanilla,, caramel,, and strong baking spice notes. Seasoned oak and baking spice notes take over and lead to a warming cedar and oak finish that lingers. This cask is bottled as nature intended at cask strength,, non-chill filtered,, and without any additives. The yield for this cask was 222 bottles.
